Turkey Spinach Skillet Lasagna

Introduction

Number of Servings: 10

Ingredients

    *Turkey, Ground turkey, 93% lean, 16 oz
    *Del Monte Petite Cut Diced Tomatoes, 1.25 cup
    Tomato Sauce, 1.25 cup
    Water, tap, 1 cup (8 fl oz)
    Spinach, fresh, 1 package (10 oz)
    Garlic, 3 cloves
    *Yellow Onion, Fresh (1 lg), 1 serving
    Parsley, dried, 1 tbsp
    Basil, 1 tbsp
    Oregano, ground, 1 tsp
    *Healthy Harvest whole wheat lasagna, 8 oz
    Ricotta Cheese, part skim milk, 1 cup
    Parmesan Cheese, grated, .25 cup
    Egg white, 1 serving
    Mozzarella Cheese, part skim milk, 8 oz

Directions

In a large skillet, brown turkey with onions and garlic. Drain.
Add tomatoes, water, tomato sauce, parsley, basil, oregano, and dash salt.
Stir in fresh spinach. Cook for 5 minutes
Stir in uncooked pasta.
Bring to a boil, stirring occasionally.
Reduce heat, cover and simmer for 20 minutes or until pasta is tender.
Combine ricotta,mozzarella and Parmesan cheeses.
Mix in the egg.
Sprinkle in pepper to taste.
Drop cheese mixture by rounded tablespoons onto pasta mixture.
Cover and cook for 5 minutes more.
