Mushroom Stroganoff



Introduction

A vegetarian version of a classic. A vegetarian version of a classic.
Number of Servings: 3

Ingredients

    2 pounds mushrooms, sliced (about 4 cups)
    1 small onion, chopped
    1.5 tsp olive oil
    1 C light sour cream
    1/3 C white wine

Directions

Heat olive oil in a nonstick skillet. Add onions and saute until soft. Add mushrooms and white wine and sautee until mushrooms are cooked down and soft (cook to your preference of "doneness"). Remove from heat and stir in sour cream, serve atop brown rice or noodles (neither is included in nutritional info).
