Sweet Potato Bisque

Introduction

Ingredients

    1/4 cup margarine
    1/2 cup chopped onion
    1 cup chopped celery
    2 large sweet potatoes, peeled and diced
    3 cups chicken broth
    1 cup milk (1%)
    1/2 tsp cloves
    salt and pepper to taste

Directions

In a 4 qt stock pot, melt the margarine. Add onion and celery. Saute for 10 min. Add sweet potato and chicken broth. Bring to a boil, reduce heat to medium high, cover and simmer for 25 min, until potato is very tender. Puree in batches. Stir in the milk and cloves. Season to taste with salt and pepper. Reheat and serve.
Makes 6 servings of about 1 cup.
