Daniel Fast Brown RIce Pudding

Ingredients

    Hinode California Long Grain Brown Rice - 1/4 c raw = 3/4. cup cooked rice
    Raisins, 1 ounce
    Cinnamon, ground, .1/8 tsp
    *Soy Milk, Vanilla lowfat, 1/2 cup
    Pineapple, fresh, 1 slice, thin. cut into tiny pieces

Directions

pre cook the rice. mix ingredients in pot simmer low and slow for 30 min. Makes one serving. ENJOY! Sweets when you are not eating sweets!

  • I don't use soy so I tried it with coconut milk. Was also out of raisins (boo - my 'go to' sweet snack!). Great flavor although I was hoping for more of a pudding texture :o) Guess we can't have it all, can we? Thanks for sharing this! - 2/2/11

    To make the consistency more like a pudding, I would say add more liquid and then let it simmer longer until it was evaporated. :)
