Steak tostadas with avocado

Introduction

Ingredients

    tortilla, black beans, preshredded reduced-fat Mexican cheese blend, beef, salt & pepper, lettuce, tomato, avocado

Directions

Prep tortillas: heat oven to 350, preheat cookie sheet. When oven is at temperature, place tortilla on cookie sheet, using metal rack to squish tortilla flat. Bake 10-12 minutes. Flip, bake another 10 minutes or until golden brown and hard.
Prep beans: heat up lightly drained canned black beans in a saucepan. When boiling, mash with potato masher.
Prep steak: cook as preferred, slice thin.
Shred lettuce. Thinly slice tomatoes & avocado.
Assemble: Heat broiler. Spread 1/4 cup black beans on tortilla. Top with 1/8 cup cheese. Lightly broil until cheese is melted. Top with steak & veggies, plus salsa & sour cream if desired (not included in calorie count).
I usually find 2 tostadas is a good portion for dinner but I'm quoting the per-tostada serving size.
