IntroductionTropical-flavored chicken, marinate overnight. Tropical-flavored chicken, marinate overnight.
6 chicken breasts
1 6oz can pineapple juice
1/2 can coconut milk
1/2 t. ginger
splash soy sauce
sesame seeds (optional)
Bake at 350 for one hour, covered with a foil tent to seal in moisture.
Makes six servings (one breast=one serving).
Serving suggestion: brown rice or couscous and pineapple tidbits with stir-fry veggies.
Can also be grilled, or cut chicken into cubes prior to marinating for skewers.
