Cinnamon Pancakes/Waffles

Ingredients

    1 1/2 cups sifted Whole Wheat Flour
    3 tsp. Baking Powder
    1 Tbsp. Granulated Sugar
    1/2 tsp Salt
    1/2 tsp. Cinnamon
    Pinch Nutmeg, ground
    1 large Egg, lightly beaten
    2 Tbsp Oil (Canola or Vegetable)
    1 cup 1% Milk

Directions

Mix flour, baking powder, sugar, salt, cinnamon and nutmeg. Add egg, oil and milk, mixing until dry and wet ingredients mix, but remain slightly lumpy.
Cook in a frying pan or griddle sprayed with cooking spray (drop of water will sizzle when pan is warm enough to pour mix on to cook) over medium heat.
Makes 15 - 3" pancakes - serves 5.
