Ingredients

2 lbs dry light or red kidney beans
6 cups water
1.5 t salt
900 gr (2 lb) onions, diced
3 T olive oil
900 gr (2 lb) tomatoes, diced
5 jalapeno peppers, pureed
3" Fresh Ginger, finely diced (or 45 gr/3T paste)
1-2 t red chili (or Cayenne) powder
2 Tbs chana or rajma masala spice powder
2 t turmeric powder
1-2 t salt
1 cup cilantro
Tips
Directions
1) Slow cook rjama (kidney) beans with water and 1T salt (slow cooker: 4 hrs high or 7-8 hrs low)
2) In heated oil, slowly carmamelize onions (45 minutes). Add tomato, jalapeno pepper, and ginger. Reduce to thick paste (as I don't toss the kidney bean juices). Add remaining spices and ready to add to kidney beans.
3) Combine rajma beans and onion mix. Adjust spices as needed. Bring up to heat and simmer for 5-10 minutes. Serve on rice or with nan or chaptis.
Garnish with cilantro (coriander leaves).
