Number of Servings: 12

Ingredients

    1 1/2 cups all-purpose flour
    1/2 cup whole-wheat flour
    1 3/4 teaspoons baking powder
    1 teaspoon granulated sugar
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/4 teaspoon cayenne pepper
1/2 cup (1 stick) chilled butter, cut into small pieces
2/3 cup shredded Monterey Jack cheese (about 2 2/3 ounces)
    1/2 cup grated Parmesan cheese
1/4 cup snipped fresh chives or 1 1/2 tablespoons dried chives
    2 tablespoons chopped parsley
    3/4 cup buttermilk
    1 large egg, lightly beaten

Directions

Instructions:

1. Preheat oven to 400 F.
2. In a large bowl, mix together all-purpose flour, whole-wheat flour, baking powder, sugar, baking soda, salt, and cayenne.
3. Using a pastry blender or two knives, cut butter into flour mixture until coarse crumbs form.
4. Stir Monterey Jack cheese, Parmesan cheese, chives, and parsley into flour mixture. Make a well in center. Mix together buttermilk and egg. Add buttermilk mixture at once to well in flour-cheese mixture; stir until just combined.
5. On a floured surface, gently knead dough into a 9-inch circle. Transfer to an ungreased baking sheet. Cut into 12 equal wedges, cutting through dough but not separating wedges (wedges should be touching).
6. Bake wedges until golden brown, 20 to 22 minutes. Transfer baking sheet to a wire rack to cool slightly.
