Low Carb Scotch Eggs

Introduction

This is a modification of a family favourite. You can crumb these, (roll in flour, then egg, then breadcrumbs) however would increase the carb count. These are deep fried and very yummy... Number of Servings: 6

Ingredients

    1 roll (453g or 1lb) of Jimmy Dean pre-packed Premium pork Sausage Regular
    6 Large Eggs

    Vegetable Oil for frying in

Directions

1: Hard Boil eggs let them cool then peel them,
2: Using a package of the Jimmy Dean Premium pork sausage mince, divide into 6 section
3: Wrap the sausage mince around the hard boiled egg, making sure where the meat joins that it is sealed, the meat will shrink on frying so not covering generalisly will result in exposed egg (doesn't taste different just looks funny)
4: Drop into a pot of hot oil and fry until the meat is golden brown all over, about 10 mins, but use your judgement.
5: Place on paper towel to drain excess oil off
6: Serve...

These can be served as appetizers by slicing in quarters or as a dinner with veggies and salad (not inc. in nutritional info) Add ketchup and mustard as condiments with these.

Also great reheated or cold a breakfast on the go the next day
