Chicken Bake

Introduction

Ingredients

    600 g Chicken breast, cubed
    3/4 cup chopped onion
    1 tbsp olive oil
    2 cups sliced fresh mushrooms
    2/3 cup water
    3 medium potatoes thinly sliced
    10 oz can reduced fat cr mushroom soup
    1 1/2 tbsp flour
    1/2 cup milk (skim or 1%)
    1/2 cup reduced fat sour cream
    1/4 tsp pepper
    1 tbsp butter
    1/2 cup reduced fat cheddar cheese
    1/2 cup dry bread crumbs

Directions

Brown chicken and onion in oil. Turn into medium saucepan. Add mushrooms and water. Bring to a boil. Simmer 10 minutes. Add more water if it gets dry. Turn into 3 quart casserole. Slice potatoes and arrange over chicken. Mix soup and 1 1/2 tbsp flour. Add milk and sour cream and pepper to taste. Spoon over chicken/mushrooms. Bake @ 350 for 1 hour or until potatoes are tender. Melt butter, stir in cheese and bread crumbs. Sprinkle over casserole. Bake again for 15-20 minutes or until lightly browned. Makes 6 servings.
