Chicken Tetrazzini

Number of Servings: 6

Ingredients

    1 TB butter
    1/2 cup onions, chopped
    1/2 tsp sage
    1/4 tsp pepper
    1 cup chicken broth
    1 cup milk
    1 can cream of mushroom soup
    4 oz canned mushrooms
    3 cups (about 1 lb) chicken breast, cubed or shredded
    1/2 cup chopped fresh parsley (or 1 TB dried parsley)
    1/3 cup grated parmesan cheese
    8 oz whole wheat spaghetti, cooked
    1 cup shredded cheddar or swiss cheese

Directions

Cook onion in butter over medium heat until clear. Add pepper and sage. Stir in broth, milk, cream of mushroom soup, and mushrooms. Cook until mixture boils. Stir in chicken, parsley, parmesan and spaghetti. Spoon into casserole dish. Sprinkle with shredded cheese. Bake at 350 for 20 to 30 minutes.
