Low Fat Potato Salad

Introduction

This salad is so good, my family had no idea it was low calorie and low fat and healthy!! Normal serving of potato salad is normally around 600 calories, but this one is just a little over 100! Normal serving of potato salad is normally around 600 calories, but this one is just a little over 100! Awesome!

Ingredients

    3 Med - Large Potatoes (162 cal each (486 cal total)
    2 Larges Eggs, hard Boiled (70 cal each (140 cal total)
    1 Cup of non-fat plain Greek Yogurt (120 cal total)
    3/4 Cup of Hellmanns/Best Foods Low Fat Mayonnaise (15 cal Tbsp (180 Cal total)
    1 Tbsp. Mustard (to taste, may add more if you like)
    1 tsp. White Vinegar
    Dill
    Salt
    Pepper
    Cayenne Pepper for a punch of flavor (optional)

Directions

Boil the potatoes with skin on until soft. Let them cool then dice them up into bite size pieces. Add the rest of your ingredients. Let it chill for at least an hour, up to 12 hours.

Enjoy! You have to try this!!! Trust me on this one!!! Now I can have fatty salads this summer and not feel guilty!
