1 1/2 cups cornmeal
1/2 cup all-purpose flour
1 tbsp. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
1 1/4 cups buttermilk (can use sour milk or plain yogurt as well)
1/4 cup butter, melted (can use canola or olive oil as well)
1 large egg
In a medium bowl, combine the cornmeal, flour, sugar, baking powder and salt. In a small bowl, stir together the buttermilk, butter and egg. Add to the flour mixture and stir gently, until just combined.
Pour the batter into the prepared pan or skillet. Bake for 25-30 minutes, until golden aroung the edges and puffed and cracked on top.
