"Ambrosia" Oatmeal

Ingredients

    2 T (15g) sweetened, shredded coconut
    1/2 c (40g) dry, old-fashioned oats
    1/2 c skim milk
    1/2 c water
    1/2 t coconut extract
    1/2 - 1 T sugar free vanilla syrup (like DaVinci or Torani)
    1 t canola oil

Directions

Cut pineapple & banana into desired bite-size pieces. Set aside.

Bring milk & water to a boil. Add oats and cook on medium heat, stirring occasionally, for 5 minutes. Remove from heat, cover, and let sit for up to 5 minutes until desired consistency is reached.

While oatmeal cooks, bring a nonstick pan to medium-high heat and toast coconut. (Watch this as the coconut will burn quickly!) Remove from heat and set aside with banana & pineapple.

Once oatmeal has reached desired consistency, stir in pineapple, banana, & coconut. Reheat in microwave approximately 30 seconds if desired and enjoy!
