Fiesta Scrambled Eggs

Ingredients

    1 Tbsp Olive Oil
    1 clove garlic, minced
    1 shallot, minced
    1 medium tomato, diced
    1/2 Lg red or yellow bell pepper, diced
    6 slices Canadian Bacon
    7 med eggs, scrambled
    3 wedges Laughing cow light cheese.

Directions

Saute veggies in oil over med high heat. Add eggs and scrambled until cooked through. Remove from heat, add cheese and fold and mush until well combined and melted.

2-3 servings (NI for 2 servings)
