Ingredients

    2 lbs Chicken Pieces
    1medium green pepper, coarsely chopped
    1 medium onion, sliced
    1 large tomato, seeded and coarsley chopped
    1 (15 oz) can tomato sauce
    1 (6 oz) can tomato paste
    1/2 cup dry red wine
    2 cloves garlic, minced
    1 tbsp sugar
    1 tsp basil
    1 tsp oregano
    1/2 tsp fennel seed
    1/2 teaspoon pepper
    Grated Parmesan cheese (optional - not included in nutrional value)
    Cooked spaghetti (optional - not included in nutrional values)

Directions

NOTE: The instructions below are specifically for an Advantium 120 oven. For conversion purposes, follow all directions, bake in 350 degree over for 40-50 minutes (estimated).

Place chicken pieces in a 2 1/2-quart oval casserole; add green pepper, onion and tomato. Combine tomato sauce, tomato paste, wine, garlic, sugar, basil, oregano, fennel seed and pepper; pour over chicken. Cover. Place dish on metal tray. Cook for 30-32 minutes at U=1, L=1, M-9 or until done, stirring after 18 minutes.

Sprinkle with cheese. Serve over spaghetti, if desired.

Makes 8 servings.
