Chicken & Bean Soup

Introduction

Hearty and nutrient rich! If this is too high in sodium, you could cook your own beans instead of using canned. I make a big pot and freeze meal sized portions for a quick and easy meal starter. Ingredients

    2 32 oz cartons/cans of chicken broth
    2 carrots, sliced
    1 C chopped red onion
    1 red bell pepper, chopped
    1 green bell pepper, chopped
    1 15 oz can black beans
    1 15 oz can red kidney beans
    1 15 oz can garbanzo beans (chick peas)
    1 C frozen corn kernels (or 1 15 oz can)

    1-2 ribs celery, chopped, optional

    12-16 oz precooked chicken
    (cook your own or get a rotisserie chicken
    from your favorite grocery deli)

    12-16 oz jar of salsa of your choice
    or make your own

Directions

Start heating chicken broth in a large pot. Add the sliced carrots, chopped onion, and garlic. (And chopped celery if you're using it) Drain and rinse the 3 beans (and corn, if canned), and add to pot. Chop the red and green peppers, add to pot. If your chicken is not already boned & skinned do that, cut into bite size pieces and add to pot. Add the salsa. Vegetables should be pretty much done by the time you add the salsa. Heat through and enjoy!

Makes approximately 13 1-cup servings.

  • This was very good, I added about 14 cloves of garlic and used dry beans instead. I did not use the corn. - 10/26/09
