Turkey meatloaf

Introduction

Easy way to sneak in a little veggie for your picky non-veggie eaters. Can substitute veggies and top with your desired sauce to suite taste. Also you can always add whatever spices you like to make the meatloaf more Mexican or Italian style as well. Easy way to sneak in a little veggie for your picky non-veggie eaters. Number of Servings: 6

Ingredients

    1 lb lean ground turkey
    .5 cup breadcrumbs, plain
    1 large egg
    8 oz of mushrooms, chopped fine
    .5 medium onion, chopped fine
    .5 cup skim milk
    .5 bell pepper, chopped fine

Directions

Preheat oven to 425 degrees. Spray skillet with nonstick spray. Heat over medium heat. Add peppers, mushrooms, and onion to skillet. Sautee until the peppers are soft, onions are translucent, and mushrooms release their liquid. Season with salt, pepper, and garlic as desired. Remove from heat and allow to cool. Beat egg in bowl. Add turkey, milk, and breadcrumbs to bowl with eggs. Add mushroom mixture to bowl. Mix well. Spray 9x13 an with nonstick spray. Place meat mixture into pan and form one loaf or 6 mini loaves. Bake in oven for 25 minutes for small loaves and 35 minutes for large loaf. Serves 6

**Note
Before placing the loaf into the oven you can top the meatloaf with ketchup, bbq sauce, salsa, or chili sauce as desired depending on your families taste. (Not included in nutrition)
