Power Pancakes

Introduction

This recipe is not mine! I just copied it here, so that I could track it in my food journal. This recipe is not mine! I just copied it here, so that I could track it in my food journal.
Number of Servings: 4

Ingredients

    1 cup whole wheat or buckwheat flour
    1/4 cup quick-cooking oats (optional)
    3 tsp. baking powder
    1 cup skim milk
    3 Tbsp. canola oil
    1 Tbsp. honey or blackstrap molasses
    1 egg

Directions

1) In a large bowl, combine flour, oats, and baking powder. 2) Stir in milk, oil, honey or molasses, and egg.
3) Heat a nonstick griddle or pan over medium heat (use cooking spray).
4) Pour or scoop the batter in, using approximately one-fourth cup for each pancake.
5) Brown on both sides.
6) Eat on the spot, or make several and reheat when you're ready to eat.

Makes eight 4 in. pancakes.
