Rhubarb Cobbler

Ingredients

    1/2 cup whole wheat flour
    1/2 cup sugar
    1/2 cup 1% milk
    1/2 tsp baking powder
    1/4 tsp salt
    2 cups rhubarb

Directions

In a medium bowl mix flour, sugar, baking powder & salt. Add milk and mix well.
Spray a 8x 8-inch baking dish with cooking spray and pour in batter mix. Sprinkle rhubarb over the top and bake in a 350 degree preheated oven for 45 minutes.

Serves 9

You can substitute any fruit you would like for the rhubarb (calories will change depending upon which fruits you use).
