Introduction

This rice is simple and easy to make but, full of robust flavor from the curry leaves combining with coconut milk. You will be amazed by the aroma spread through out your home as it is being cooked! Ingredients

    Basmati Rice, Tilda brand Uncooked 1/4 cup, 4 serving
    Coconut Powder - 3 Tbsp mix with 1 cup of warm water
    Water, tap, 1 cup (8 fl oz)
    Coconut Oil, 1 1tsp
    Pepper, black, 7-9 whole corns
    Green chillie Peppers, Thai 1 -3 each one split in two.
    *Cumin seed, .5 tsp
    Green Beans (snap), .5 cup
    Baby Carrots, raw, 4 medium
    Sweet Corn, Fresh, 2 tbsp
    Peas, fresh, 2 tbsp
    Salt, .25 tsp
    Fresh green curry leaves.

Directions

Heat coconut oil, drop pepper corns, cumin seeds and when they pop, add curry leaves and split chili peppers. Pour this mixture over the washed and drained basmati rice in the rice cooker. Add the coconut milk ( you can use the light version from the can too), water, all the veggies and salt. Turn the rice cooker on and viola, flavorful rice in less than 20 minutes. Serve with a Indian curry with gravy.
