Chocolate Chocolate Chip Oatmeal Cookies

    1/2 cup brown sugar
    1/4 cup granulated sugar
    1/4 cup applesauce, unsweetened
    dash, vanilla
    1 large egg

    1 cup whole wheat flour
    1/2 cup cocoa powder, unsweetened
    1/2 tsp baking powder
    1/4 tsp baking soda
    1 cup steel cut oats
    1/2 cup semi-sweet mini chocolate chips


Preheat Oven to 375.

In a large bowl mix the brown sugar, granulated sugar, applesauce, egg, and vanilla until smooth. Add egg and beat for 1 minute on low.

In another medium bowl, sift together flour, cocoa powder, baking powder, and baking soda.

Slowly add the dry mixture to the wet mixture until combined (should be somewhat thick), add more flour if necessary. Once combined, mix in the oats and chocolate chips.

Lightly spray two cookie sheets with cooking spray. Scoop cookie mixture onto sheets, about 1/2 tablespoon each, leave about 1 inch between.

** Note ** because there is no butter in these, they do not flatten (or didn't in my oven) you may want to press the dough down slightly before baking, or wait to see how they do in your oven and press them once they are almost baked.

Bake cookies for 10-15 minutes. Allow to cool on pans for 1-2 minutes and then transfer to a wire rack to cool completely.

Makes about 27 cookies (using a 1/2 tablespoon scoop)
