Yeast Raised Waffles (Marion Cunningham's recipe)

Introduction

Sooooo good, crispy and light. It's also the easiest waffle recipe I've run across, though it does need to be made the night before. I've already cut the butter by a couple of tablespoons, and you could probably get away with even a little less. Sooooo good, crispy and light. Number of Servings: 18

Ingredients

    1 pgk. dry yeast + 1/2 c warm water
    2 c milk
    6 T butter
    1 t salt
    1 t sugar
    2 c flour
    2 eggs
    1/4 t baking soda

Directions

Sprinkle yeast over warm water and let sit about 5 minutes or until dissolved. Melt the butter in the microwave and combine all ingredients except the baking soda. Whisk till smooth. Cover and let sit overnight (if the house is cool I don't refrigerate, but on a warmer night I would.)

In the morning, re-whisk, add the baking soda and cook.
