Modified Baked Potato Cubes

Introduction

Saw a recipe for something similar on Spark, but I wanted to pare down the recipe to make for a week's worth of servings as a side dish for two people. Saw a recipe for something similar on Spark, but I wanted to pare down the recipe to make for a week's worth of servings as a side dish for two people.
Number of Servings: 12

Ingredients

    3 lbs red potatoes
    2 Tbsp olive oil
    1 Tbsp basil
    1 Tbsp ground oregano
    2 tsp garlic

Directions

1.) Preheat oven to 400 F.
2.) Scrub and cube potatoes.
3.) In large bowl, mix potatoes with oil and seasonings. I usually do it by hand, as that seems to get the most even coating over all the potatoes.
4.) Spread potatoes in a single layer on cookie sheets and bake for 50 minutes or until slightly browned and crispy.

Makes about 10-12 servings of 1/2 cup each.
