Que Barbara ! Texas Hot Sauce

Ingredients

9 cups of tomatoes
2 ½ cups onions
1-cup white vinegar
1/3 cup salt
1/3 cup sugar
1 T chili powder
1 t black pepper
1 t cayenne pepper (opt.)
1 t cumin
1 T garlic powder or 3 cloves fresh
1/4 – 1/3 cup jalapeño peppers
Directions
Peel the skin off the tomatoes. (The easiest way to do this is to place them in boiling water for one minute. Remove and place in cold water to cool. The skin will then slide off easily.)
Peel and cut the onions into quarters.
Mix powdered ingredients together.
In a blender, add some tomatoes, some onions, some vinegar, some powdered ingredients, and some jalapeños. Start with ¼ cup of peppers and increase depending on desired heat factor.)
Blend. You can pulse for a chunkier sauce.
Repeat until all ingredients have gone through the blender. Simmer for fifteen minutes. Make 24 1/3 cup servings.
