Tortilla soup with chicken

Introduction

Based on Rick Bayless' recipe (modified to reduce fat). A light chicken broth base seasoned with tomatoes, garlic & onions with chicken, tortillas, cheese & avocado garnishes. Ingredients

    New Mexico dried chile, garlic, onions, oil, canned tomatoes (preferably fire-roasted), chicken broth, chicken breast, salt, tortilla, avocado, Mexican reduced-fat cheese blend

Directions

Toast chile on hot pan for a few seconds per side. Remove stem & seeds. Tear chile up, put in blender. Add can of tomatoes, blend well.
Prepare garnishes: bake 4 tortillas in 350 oven until browned (10-12 min per side). Chop up avocado.
Saute onion & garlic in oil until browned, scoop into blender (leaving oil in pan), puree.
Heat up oil again, add puree & cook 6 minutes or until thickened. Add chicken broth, bring to boil. Simmer 15 minutes.
Taste & season for salt. Add chicken, cook 5 min.
Garnish with tortilla bits, avocado & cheese. Serve with lime wedges (not logged in recipe).
