Heathiest Ever Banana Bread

Submitted by: ORGANICGAL1

Introduction

Yummy stuff...even my picky kids like it. I do put a tiny bit of butter cream icing on it for them. However this recipe is without the icing as a topping. It is a very moist and filling bread...will stick with you until lunch! Yummy stuff...even my picky kids like it. I do put a tiny bit of butter cream icing on it for them. Ingredients

    Ingredients:

    * Salt, 1 tsp
    * Vanilla Extract, 1/2 tsp
    * Applesauce, unsweetened, 3/4 cup
    * Water, bottled, 1/4 cup
    * Baking Soda, 1 tsp
    * Honey, 1 cup
    * Flour, white, 3/4 cup
    * Egg white, 5
    * Whole Wheat Flour, 2 3/4 cups
    * banana, 2 cups ...5 or 6 bananas
    * butter, unsalted, 1 pat (1" sq, 1/3" high)

Directions

In a large bowl, beat the applesauce and honey together. Add the eggs, and mix well, Stir in the bananas and vanilla extract. Stir in flours and salt. Add baking soda to hot water, stir to mix, and then add to batter. Spread batter into 2 greased loaf pans (I use an organic olive oil spray).
Makes 2 loaves.
325 degrees F for 55-65 minutes. I actually bake mine for 68 minutes...but that's my weird oven. Yours may be different!! The butter is for spreading on top of the bread when it comes out of the oven all piping hot. Add more or use less per your taste.

Tips: 1.) always use organic ingredients when you can.
2.) you can double this recipe and freeze extra loaves.
