Dutch Oven Jambalaya

Introduction

Number of Servings: 17

Ingredients

    1.5 poulds boneless chick thigh (7/8)
    16oz smoked sausage
    3 green pepperss
    2 onions
    4 carrots shredded
    1 bunch brocolli choppedi
    6 cups chicken broth
    3 cups rice
    creole seasoning to taste

Directions

Throw chicken and sausage in dutch oven with lid and cook for 34-45 minutes at 475 degrees. Take out of oven and set aside. Turn oven down to 375. Take chicken and sausage and set aside. Put dutch oven on stovetop on high and cook vegetables of choice in leftover fat + some chicken broth if needed. When done, add chicken broth and creole seasoning and heat to boil, Meanwhile cut up chicken and sausge into small pieces and add to pot. When boiling, add rice, put lid on and put back in 375 oven for 30-40 minutes or until done!.

Make with chicken breast and low fat sausage for less fat.

Makes 17 1 cup serviings.
