Moroccan Chicken Stew

Ingredients

    2 tbsp. olive oil
    24 oz (1.5 lbs) chicken tenderloins
    2 med red onions sliced
    1 lg green pepper cut into 1" pieces
    3 cloves garlic finely chopped
    1 tsp of ground cinnamon
    1 tbs curry powder
    1 can (10 3/4 oz) campbells condensed tomatoe soup
    1/3 cup of golden raisins
    1 can (about 15 oz) chickpeas (garbanzo beans) rinsed & drained
    1/3 cup of silvered almonds, toasted

Directions

Makes 6 servings @ appox 1 cup ea

heat oil in 5 qt saucepot over med heat. add chicken & cook until well browned on both sides. remove chicken

reduce heat to med; add onions, pepper & garlic & cook for 5 min or until tender crisp. add cinnamon & curry & cook & stir 1 min. stir in soup & heat to a boil. return chicken to saucepot. reduce heat to low, cover & cook 15 min

stir raisins & chickpeas in saucepot. cook 10 min or until chicken is cooked through. stir in almonds

serve over rice or grains (not included in calorie count)
