Thai quinoa mango salad

Ingredients

    quinoa, chili papper, red onion, cilantro, lime juice, olive oil, spices.

Directions

Rinse quinoa well. Bring vegetable broth to a boil. Add drained quinoa. Bring back to a heavy simmer for 15 minutes or until liquid is absorbed. Remove from heat. Cover for 5 minutes. Fluff with a fork.

Meanwhile, dice all veggies. Add lime juice, olive oil and spices to taste. Fold into quinoa.
