Hearty Black Beans & Rice

A yummy dish suitable for vegetarians, vegans - and all those who love great food! A yummy dish suitable for vegetarians, vegans - and all those who love great food!
Number of Servings: 6

Ingredients

    2 C brown rice, cooked
    2 T canola oil
    1/2 onion, chopped
    1/2 green pepper, chopped
    1 clove garlic, minced
    2 cans black beans (don't drain)
    1 T red wine vinegar
    1 t black pepper
    1/2 t salt
    1/2 t cumin
    1/2 t oregano
    3 scallions, sliced

Directions

Start rice cooking. Saute onion, pepper & garlic in oil in large skillet over medium high heat. When vegetables are nearly tender, add beans through oregano. Simmer 15 min, then add scallions. Simmer another 5 min. Serve over rice.
