1C Egg substitute
1C LF Cottage cheese
1C FF Ricotta cheese
1 Green pepper
1 Red pepper
2T Olive oil
salt and pepper to taste
Mix cottage cheese, ricotta cheese, eggs and egg substitute in a blender and cream it.
Cut up all veggies and saute in a pan with the oil till tender.
Add salt and pepper and any other spices you may like.
Once veggies are cooked to desired texture pour in the egg mixture and cook that on the stove for about 6-8 minutes on medium heat.
When the egg mixture is mostly cooked on stove top, put in over for about 5 minutes, but watch it as it will cook up fast.
Once fully cooked and somewhat brown on top, add the mozzo cheese and put back in oven for about 1-2 minutes again watch it as it will melt and brown fast.
Makes 8 servings. I cook this in a 12" pan it will be very full.
