1 can of lentils, drained (580 grams) 3 small apples, peeled and cubed 1 medium cucumber, peeled 1 tbsp maples syrup 2 tsp curry powder 3 tbsp soy sauce 3 tbsp lemon juice 1/2 tsp sambal oelek (hot pepper sauce) 2 tbsp olive oil (or more if preferred) salt to taste
Drain the can of lentils. Peel the apples and cuke. Cut the apple into cubes, scoop out the seeds of the cucumber and discard. Cut the rest into cubes. Mix with the lentils. Mix the syrup, curry powder, soy sauce, lemon juice and sambal oelek together and pour over the other ingredients. Wait at least one hour before serving to allow the flavors to mix. Add salt, and more curry powder to taste. Add the olive oil.
