Best Ever Eggplant Parmesan

Introduction

This has quickly become a family favorite...and one of the few vegetarian dishes my meat-eating parents like too! This has quickly become a family favorite...and one of the few vegetarian dishes my meat-eating parents like too!
Number of Servings: 10

Ingredients

    1 Eggplant, peeled and sliced into 10 thick "steaks"
    1 1/2 cups marinara
    1 cup shredded part-skim mozzarella
    2 cups breadcrumbs (I use panko)
    2 eggs
    1 cup olive oil

Tips

If your breading is getting soggy, try dipping eggplant slices in flour before the egg. Not included in nutritional information.


Directions

1. Lightly salt eggplant slices, let sit for 30-45 minutes. Rinse off salt in cold water, pat dry with a paper towel.

2. Preheat oven to 350.

3. Dip eggplant slices into egg, then breadcrumbs, and pan-fry in olive oil until golden-brown.

4. Place breaded eggplant slices in a baking dish. Cover each with marinara sauce, then mozzarella. Bake for 20 minutes, or until sauce is bubbling and cheese is lightly browned.
