Best Ever Eggplant Parmesan

Introduction

This has quickly become a family favorite...and one of the few vegetarian dishes my meat-eating parents like too! This has quickly become a family favorite...and one of the few vegetarian dishes my meat-eating parents like too!
Number of Servings: 6

Ingredients

    1 Eggplant, peeled and sliced into 6 thick "steaks"
    1 1/2 cups marinara (I make my own from scratch)
    6 oz Mozzarella or ProvoloneCheese
    1/4 cup cornmeal
    2 T olive oil

Directions

1. Lightly salt eggplant slices, let sit for 30-45 minutes. Rinse off salt in cold water, pat dry with a paper towel.

2. Preheat oven to 350.

3. Dip eggplant slices into cornmeal and pan-fry in olive oil until golden-brown.

4. Place breaded eggplant slices in a baking dish. Cover each with 1-1.5 Tbsp. of marinara sauce, then cover with 1 oz mozzarella (shredded or sliced). Bake for 20 minutes, or until sauce and cheese are bubbling.
