Healthy Cornbread

Introduction

Number of Servings: 8

Ingredients



    * Yellow Cornmeal, 1 cup (remove)
    * Flour, whole grain, 1 cup (remove)
    * Baking Powder, 3 tsp (remove)
    * Salt, 1 tbsp (remove)
    * *Canola Oil, 2 tbsp (remove)
    * Egg, fresh, 2 large (remove)
    * Milk, nonfat, 1 cup (remove)

Directions

Preheat oven to 400F. Mix together dry ingredients. In a separate bowl, mix together wet ingredients. Dump wet ingredients into dry ingredients and mix until just combined. Heat an iron skillet with a little oil or spray until quite hot and pour in the batter (alternatively, use a well greased casserole dish, but don't heat it up first). Put in the oven. Cook the cornbread until a toothpick comes out clean. Cut into 8 pieces. Eat it fresh or it will become dry quickly.
