White Bean, Ham Hock, and Sausage Stew

Ingredients

    * *Ham Hocks, smoked, 3 pieces
    * Beans, white, 2 cup, soaked 4 hrs or overnight
    * Chorizo bilbao or italian sausage, 1/2 lb.
    * Onions, raw, 2 cup, fine dice
    * Carrots, raw, 1 cup, fine dice
    * Celery, raw, 1 cup, fine dice
    * Tomatoes, diced, 1 can
    * Thyme, fresh, sprig
    * Bay Leaf, 2
    * Olive Oil, 2 tbsp
    * Garlic, 2 clove chopped
    * Tomato Paste, 2 tbsp.
    * *Balsamic Vinegar, 2 tbsp
    * Salt, to taste
    * Pepper, black, to taste
    * Swiss Chard, 4 cup, chopped
    * Water, tap, 8 cups

Directions

(1) Pressure cook soaked beans with water. ham hocks, thyme and bay leaf according to cooker directions. Natural pressure release method.
(2) Saute garlic, onion, celery, carrot with tomato paste.
Add (2) to (1)
(3) Add can of dice tomatoes and chard.
(4) Bring to pressure again and pressure cook for 5 more mins. Quick pressure release method.

Add balsamic vinegar before serving.
