Green, red, yellow and orange peppers (or whatever combination you have), total 1-1 1/2 cup, chopped well
1/2 large onion, chopped
2/3 can crushed tomatoes (28-oz can)
1 Tbsp tomato paste
2 cans black beans, drained and rinsed
Cumin, Oregano, Chili powder to taste
Water -- 1 cup or to taste
Shredded cheese to top
Add beans and spices, and stir well.
Slowly add tomatoes, stirring.
Add water and tomato paste. Stir well to mix.
Cover and let cook an hour or until you're ready to eat.
Serve with shredded cheddar cheese on top (1 oz included in nutrition information).
Makes 6-8 servings
