1/4 cup short grain rice
2 cups 2% milk
1 1/2 tsp.cinnamon
1/2 tsp. nutmeg
1/4 cup brown sugar, packed
dash of salt
1/4 cup dried cranberries
1 1/2 tsp. vanilla
Put the rice, milk, spices, sugar and salt in a large, heavy saucepan.
Simmer, covered, over low heat for approximately 30 minutes, or until rice is soft and most of the milk is absorbed, stirring occasionally.
The mixture will become creamy as it cooks.
Remove from heat and stir in cranberries and vanilla. Let cool, or serve warm.
NOTE: using 1%reduces the calories to 150, and non-fat milk reduces thecalories to 141 However, it does reduce the creamy texture somewhat
