Sour Cream Pear Cranberry Cobbler

Ingredients

    3 cups chopped pears
    3 cups fresh cranberries
    1/4 cup all purpose flour
    1/4 cup brown sugar
    1/2 tsp ground cinnamon and groung ginger
    1/4 tsp ground nutmeg

    Biscuits:
    1/2 cup whole wheat flour
    1/2 cup all purpose flour
    1/2 tsp ground cinnamon and ground ginger
    1/4 tsp round nutmeg
    1/2 Tbsp baking powder
    1/4 tsp baking soda
    2 Tbsp canola oil
    1/2 Tbsp brown sugar
    1/2 cup sour cream
    1 Tbsp honey

Directions

Combine the filling ingredients in a large bowl. Toss to combine. Spread evenly into an 8x8-inch casserole dish.

Combine the flours and spices. Add the oil, sugar and sour cream, stirring until a ball forms. Add a bit of milk if necessary. On a lightly floured surface, rolled the dough out to 1/2-inch thickness. With a small round cookie cutter, cut dough into rounds. Place rounds over top of filling, slightly overlapping. Continue until all the dough is used up. Drizzle with honey.

Bake in preheat 350F oven for 45 to 50 minutes.

Serves 8.
