Introduction

Super good breakfast muffins. Very filling and high fibre. Super good breakfast muffins. Very filling and high fibre.
Number of Servings: 8

Ingredients

    0.5 cup ground flax seed
    0.5 cup whole wheat flour
    0.5 cup oat bran
    0.4 cup brown sugar lightly packed
    0.4 cup splenda
    1 teaspoon baking soda
    0.5 teaspoon baking powder
    dash of salt
    1 tablespoon ground cinnamon
    0.5 teaspoon nutmeg
    0.75 cup grated carrot
    1 medium apple peeled, cored and grated
    0.25 chopped walnuts
    3 tablespoons sunflower seeds
    85 ml. 1% milk
    1 egg beaten
    0.5 teaspoon vanilla

Directions

Preheat oven to 350 degrees. Combine all ingredients except milk, egg and vanilla in one bowl. Mix well. In seperate bowl, beat egg. Add milk and vanilla. stir. Add wet ingredients to dry. mix well. Spoon into 8 lightly greased muffin tins. Bake for 25 minutes.
