Introduction

a zesty change to boring stir frys a zesty change to boring stir frys
Number of Servings: 4

Ingredients

    1 cup onions
    1 cup fresh mushrooms
    3 cups chopped eggplant
    3 cups sliced Zucchini
    1 cup chopped green peppers
    1/4 cup basil pesto sauce
    1/4 cup feta cheese
    salt & pepper to taste


Directions

chop onions and mushrooms and fry together in a non-stick frying pan until golden brown.
add eggplant, Zucchini,and green peppers.
cook on medium high heat for 5 mins.
add a little water and the pesto sauce,and feta cheese, stir to mix in and cover.
cook for 10 mins or until veggies are tender and cheese has melted.
add dash of salt and pepper and presto.. you have a delicious zesty side dish.
makes four 2-cup servings.
