Roasted Lemon Pepper Chicken

Ingredients

    A Whole Fryer . fully thawed or fresh ( 3-4 lb)
    1 Whole large Lemon
    2-3 Tbsp Lemon pepper seasoning (the NO salt variety)
    Pam ( canola oil )

Directions

Preheat oven to 350
Take your whole chicken and remove all the innerards and the skin. Remove any fat that is remaining. Now rinse the chicken well with hot water. Use a large glass baking dish spray with Pam canola oil variety. Place a wire rack in bottom of dish. This keeps the fat away from the chicken as it cooks. Place the chicken in the glass dish. Take your lemon and cut it crosswise at one end half way down (dont cut in half or into pieces) place lemon into chicken with the cut end facing into the chicken. This allows the juice to stay inside and penetrate the chicken as it cooks. Now take the lemon pepper and rub the chicken all over coating it well. Cover with foil and remove foil for last 30 minutes of cook time . Cook the chicken at 350 degrees for 1 and half hours. If the chicken is larger (greater than 5 lbs) cook for 2 hours. Remove chicken from oven let rest for 10 min then serve with a great side of baked sweet potatoes and green beans.
Makes 8-10 servings
Tip: Use leftovers to make a wonderful chicken salad by cutting into chunks and mixing with onion celery and low cal mayo. salt and pepper. Great for next day lunch.
