Light Spinach Egg Mini Muffins

Introduction

Number of Servings: 6

Ingredients

    1/2 C fit and active egg substitute
    1 C spinach, chopped, fresh
    1 T bacon bits
    1 T plus 1 t grated parmesan cheese
    dash salt
    dash pepper

Directions

In a bowl, combine egg substitute, chopped spinach, bacon, 1 T cheese, salt and pepper. Mix. Spoon into well greased mini muffin tin (I used I can't believe it's not butter spray, 1 spray per muffin). Top each muffin with remaining parmesan cheese. Bake in 375* oven for 10-12 minutes. Mine needed 12. Per greenlitebites suggestion, I used a silicon muffin tin (AMAZING). Came right out after they were done.

Makes 6 muffins
