Pineapple Pepper Salsa

Ingredients

    1 red pepper, diced fine
    1 orange pepper, diced fine
    1 yellow pepper, diced fine
    1/2 fresh pineapple, diced fine (about 1 cup)
    1/4 cup fresh cilantro, chopped fine
    1/4 cup fresh chives, chopped
    3 cloves garlic, chopped fine
    *1 jalapeno pepper, seeded and diced fine
    2 limes, juiced

Directions

Finely dice all ingredients. Put in bowl together. Pour lime juice over and mix well. You can salt and pepper to taste, but I do not. Add more or less jalapeno for extra spice (or add seeds). Mix well. Let sit in fridge for 24-hours so flavors combine. Eat with favorite foods in place of regular salsa (I use on fish tacos, tuna wraps, and with chips).
