Dreamy Potato Casserole

Introduction

Yummy potato casserole to feed a hungry crowd. Works perfect to make ahead and bake later. Yummy potato casserole to feed a hungry crowd. Works perfect to make ahead and bake later.
Number of Servings: 15

Ingredients

    10 cups of diced potatoes (raw, peeled)
    16 oz. of Kemp's Fat Free Sour Cream
    1/4 cup of Butter (melted)
    1/2 cup of chopped green onion (scallions)
    1 Can (10.75 oz) of Cream of Mushroom Soup
    2.25 Cups of Shredded Cheddar Cheese

Directions

Peel and dice (into even cubes) 10 cups of russet potatoes.
Combine sour cream, butter, soup, cheese and onion.
Add potatoes and stir.
Place in baking dish of your choice -- I usually use 2 1/2 quart and a 1 1/2 quart casserole and bake as I need them.

Bake uncovered at 350-375 degrees for 1.5 hours, may bake longer for crunchier top. If you refridgerate for later use, remove from refridgerator at least one-hour prior to baking, or allow longer cook time.
