New Irish Stew

Number of Servings: 6

Ingredients

    2 tsp olive oil
    1 pound boneless lamb shoulder cut into cubes
    4 red or gold Yukon potatoes, unpeeled, course chopped
    3 carrots, peeled and cut into bite size pieces
    1 onion , course chopped
    2 leeks, rinsed, with white and light green sliced coarsely
    1 large turnip, peeled and coarse chopped
    2 TBS Flour
    1 bay leaf
    1/2 dried Rosemary
    1 tsp sea salt
    1/4 ground black pepper
    1 c. green peas (fresh or frozen)

Directions

In large non stick pot or deep skillet over medium-high heat, heat oil. Working in batches add meat and brown on all sides. Transfer meat to a medium bowl as it browns.
Add potatoes, carrots, onions, leeks and turnip to pot. Cook 10 minutes, stirring occassionally. Stir in Flour until blended. Add 3 cups of water, bay leaf, rosemary, salt and pepper. Bring to boil, reduce heat. Add meat and simmer uncovered until meat is tender. 50 to 60 minutes. Add peas, simmer 5 additional minutes and serve.

  • I made this recipe with beef and no peas because my hubby don't like peas and it was excellent. not sure about the change in calories. i'm going to try to recalculate it and submit but still very good. I just couldn't afford the lamb. - 4/13/11
