Introduction

This dish is a family staple in my house. It's delicious, quick, and oh so easy to make.

It's also easy to adapt and change according to your preferences.

Number of Servings: 9

Ingredients

    1 lb Boneless, skinless chicken, cubed
    1.5 cups instant brown rice
    1 box rice pilaf (select the brand with the lowest sodium)
    1.5 cups frozen peas
    2 cups chicken broth (select the brand with the lowest sodium)
    1 tsp garlic powder

Directions

Preheat oven to 375 degrees.

Combine all ingredients into a 1.5 quart oven-safe dish. Stir well.

Bake for 25-30 minutes or until most of the liquid is absorbed and the rice and chicken are cooked through.

Stir after about 20 minutes of cook time.

Before eating you may wish to top with any or all of the following (not included in the nutrition count): salt and pepper, butter, or soy sauce.
