Michelle's One Pot Chicken, Rice & Veggies

Introduction

I used extra lean ground chicken, 1 tsp sage, .5 tsp summer savoury and 1 tsp thyme, as well as salt and pepper to taste. Play it up your way with different meat or veggies! Ingredients

    Lean ground turkey/chicken
    Red & Green Peppers
    Zucchini
    Onion
    Garlic (chopped)
    Chick Peas
    Brown Rice
    Low Sodium Chicken Broth

Directions

In a large pan on medium heat olive oil and add onion, garlic (chopped), peppers and zucchini and cook for 4-5 minutes stirring to avoid browning. Add ground chicken, break up and cook until no pink shows. Add chick peas and seasonings and stir to mix. Add rice and chicken broth, stir. Turn up heat to bring to a boil, then reduce heat to simmer for 20-25 minutes until rice is cooked.
Makes 7 1-cup servings
