Easy Beef Stew



Introduction

I got this recipe from a "Cooking for Two" cookbook when I was about 18 and a newly-wed. I liked it so much I've been using it ever since. The secret ingredient is the V-8! Number of Servings: 23

Ingredients

    1 lb of lean stew meat
    4 potatoes
    6 carrots
    1 onion
    4 cloves of garlic (less if you aren't crazy about garlic)
    1 tsp basil (or to taste)
    1 tsp oregano (or to taste)
    1 14-oz bottle of vegetable juice (V-8 or generic)


Directions

Chop up all vegetables--I leave the peelings on the potatoes. Combine beef, veggies, and seasonings in crock-pot or dutch oven. Add veggie juice then enough water to fill pot 3/4 of the way.

If using a crock pot, I set it on high and leave it for 6 or so hours. On the stove top, simmer on med-low until the carrots and potatoes are soft.

Delicious and low calorie. Very filling too. No salt is necessary, even with low sodium veggie juice.

It makes about 23 1-cup servings.
